200ml recently pressed lemon juice
500g granulated sugar

For the Drink (produces 850ml, to serve 10)

150ml peach-flavored liqueur
200ml clementine syrup (see above)
Whole cranberries, for garnish

Instructions

Making the Syrup: Combine all the ingredients inside a pot, heat until it reaches a simmer, stirring until the sugar dissolves. Next, turn off the stove and let it to cool fully. Decant into an sealable bottle, cap it keeping it in the fridge, where it will keep for about one month.

To make Cocktail Base: Combine the specified liquid ingredients into a sizeable container, let it rest for 60 minutes, then strain best through muslin, to ensure it's perfectly clear.

To serve: Measure 85ml from the cocktail base to a cocktail shaker packed with ice, and agitate gently for about 60 seconds to cool it down. Strain to a cold coupe glass or similar, garnish with some cranberries and finish with a light spray of mandarin oil over the drink.
